
I'm trying to get in the holiday spirit over here at casa de arugula and what says the holidays more than homemade fudge? And this one, this one features one of my niece Megan's favorite ingredients: marshmallow fluff. Full of preservatives you say? Yes, but come on, it's the holidays, and you know you want an excuse to buy that plastic white tub. And this fudge is delicious. Plus you will have leftovers to make peanut butter and fluff sandwiches.
Here's Uncle Sonny. He says a little fudge is good for the soul, especially fudge with fluff.

Uncle Sonny's Peanut Butter Fudge
Makes 3 pounds
Ingredients
3 cups sugar
3/4 cup margarine
(Note from arugulafiles: oh dear, try substituting butter if you don't like margarine and truth be told I'm not sure it will work with butter, but I don't see why not)
2/3 cups evaporated milk
1-12 oz pkg peanut butter chips
2 cups marshmallow fluff
1 cup chopped peanuts
1 tsp vanilla
Directions
Combine sugar, margarine (or butter!), and milk in saucepan and bring to a rolling boil, stirring constantly for 5 minutes. Remove from heat, stir in peanut butter chips until melted. Add marshmallow, nuts, and vanilla until well blended.
Pour into a 9 x 13 pan. Cool at room temperature. Set for 12 hours before slicing into squares. Store in refrigerator until gone, which won't be long if my Aunty Franny is around.
