This coleslaw is inspired by Alice Waters. I think she would be pleased with it.
Ingredients
1/2 purple cabbage
1/2 cup chopped cilantro
1/2 red onion
juice of one lime
3 carrots
4 tablespoons apple cider vinegar (red would work too)
2 tablespoons olive oil
salt and pepper to taste
Directions
- Chop cabbage
- Sprinkle cabbage with salt - set aside for 30 minutes; this softens the cabbage a bit
- Shred carrots
- Slice onions in thin long strips
- Chop cilantro
- Drain cabbage
- Add other veggies and mix
- Whisk together the vinegar and oil
- Pour over slaw
- Mix
- Add lime, salt, and pepper to taste
The flavor of this dish intensifies over time, so you may want to make it about an hour before serving.
