I'm a huge fan of fruit in salsa. The sweet pineapples in this salsa are a perfect match for the deep flavor of hot and spicy chipotle peppers. Best of all? There's enough flavor in these tacos that you don't need cheese. Though, adding some cheddar would make this meal even better. Cheese makes everything better.
This is an easy weeknight vegetarian meal.
Ingredients
1/2 red onion, chopped
1/2 pineapple, chopped
1 jalepeno, diced
1 can chipotles
1 can kidney beans (pinto would be good too)
a handful of cilantro, chopped
1 tablespoon vegetable oil
1 cup of rice
Directions
Cook rice per directions
Heat a stainless steel pan
Add a tablespoon of vegetable oil
Add beans
Add can of chipotles
Let simmer for about 3 minutes
Remove chipotle peppers and toss or save for something else (they are too hot and too intense to leave in your tacos)
Add rice
Add salsa ingredients
Mix
Serve on tortillas
Serves 3 to 4
