Looking for ways to turn a common banana bread into something uncommon? This is it. After recently making cinnamon buns with my friend Anne I was thinking that cinnamon filling is the same stuff that tops coffee crumb cake, and that, really, you could add sugar crumbs to anything. Anything. So I followed my regular old banana bread recipe (minus the walnuts) and then I made sugar crumbs.
Making sugar crumbs is easy. I took 3/4 of a cup of brown sugar, a 1/2 teaspoon of cinnamon, and a 1/2 teaspoon of nutmeg, and then smashed it together with a 1/2 a stick of butter (the butter should be a room temperature). After I poured the banana bread mix into a greased pan, I added the sugar crumb mixture to the top.
What I got in return was a perfectly moist banana bread with crumb cake topping. The best part was how the sugar caramelized around the edges of the cake.
