Weeks of winter vegetables at the farmers market inspired this mushroom dish (note to sweet potatoes: we're on a break). Besides olive oil and salt, you only need five ingredients: phyllo dough, mushrooms (I used 2 containers of baby bellas and and 2 containers shiitakes), a handful of basil, 5 garlic cloves, and 2 shallot heads.
Chop the shallots, basil, mushrooms, and garlic. Saute in pan with 2 tablespoons of olive oil until soft and browned and add salt to taste. Lightly brush four sheets of phyllo dough with olive oil. Place a oiled sheets of phyllo dough into the ramekin (pictured below). Put a few scoops of mushroom mixture in the ramekin. Prepare four ramekins (I used 7 ounce ramekins).
Fold until mushroom mixture is covered. Brush top with olive oil.
Place in 400 degree oven for 15 to 20 minutes (or until golden brown).
Remove from oven and serve!
