I'm not one for mixed drinks. Hand me a glass of Pinot Grigio and I'm happy. But with a freezer full of blueberries, you have to be creative. And what better way to use blueberries than in a margarita?
This is not a recipe per se, more like rough directions, so you will have to play around a little with the taste.
I brought 6 cups of blueberries, with a 1/4 cup of water, to a rolling boil, then reduced the heat to medium and cooked the blueberries, while stirring occasionally, for about 5 minutes, adding 6 tablespoons of sugar, and the juice of 9 limes. I took the liquid off the burner, let it cool, and then poured it into a pitcher. I added water (to fill the pitcher to 2/3 full) and additional sugar to taste (I prefer margaritas on the tart side. Add more sugar if you are a sweet freak) and then added ice (don't add the ice until you are almost ready to serve). Stir vigorously. When I served the drinks, I added a 1/2 shot of tequila to the glasses, as I served.
