I don't have much of a sweet tooth. I do, however, enjoy a good cheesecake. This pumpkin cheesecake is a recipe from Paula Deen, the queen of butter (did you think I meant Julia?). It tastes like a cheese cake-y pumpkin pie. I honestly prefer the taste of this cheesecake, but I like the seasonal aspect of the pumpkin in Ms. Deen's version. Okay, okay, the pumpkin was from a can. People don't really use fresh pumpkin in pumpkin pies, do they?
I also used ginger snaps from a box. Gasp!
But I made my cream cheese from scratch (Yeah right!). Now here's a spoon to lick. 100 percent cream cheese. Yum.
I'm not sure how to prevent my cheesecake from cracking, and I'm not sure I want to. It looks nice and rustic with the cracks.If you are looking for a good alternative to pumpkin pie, this one is a hit.
